About Us / 626 on Rood History: The 626 menus reflect Mediterranean and Latin influences with a decidedly modern American bend. Chef Theo Otte uses local suppliers and growers for many of the organic and natural ingredients used in the 626 kitchen. We buy from 4 different farmers' markets every week through the growing season'; we work directly with several local growers to source fresh produce on a weekly basis; and we also work with a local hydroponic grower. Only the highest quality ingredients are utilized; the tenderloin is choice Angus, the lamb is beautifully raised in Meeker, CO; and the Prime Angus New York Strip is from Harris Ranch. 626 on Rood is also known for premium seafood; Otte works with suppliers committed to sustainability and care for the ocean environment. Nearly all of the herbs and edible flowers that are part of the 626 cuisine come from the working garden that is part of the Urban Garden patio.
