About Us / Acquerello History: Rice has been grown on the Colombara estate since 1500. Purchased in 1935 by Cesare Rondolino. He and his family planted many different varieties of rice for year until in 1992, they began cultivating and aged Carnaroli rice (a Japonica variety). They now cultivate Carnaroli exclusively on 140 acres. The unhusked rice is aged and then refined using a careful propellor process only held by Rondolino. You end up with a firm rice, that doesn't stick, and retains its starch in cooking.
