About Us / Centrico History: Centrico ('centrally located' in Spanish), the exciting concept from renowned restaurateur Drew Nieporent, is a fresh interpretation of regional Mexican cuisine. Partnering with Nieporent is Aarón Sanchez, Centrico's chef, cookbook author and Food Network star. With the new restaurant, Aarón, son of the legendary chef Zarela Martinez, goes back to his roots to cook the Mexican food of his childhood.\n\n"Mexican cuisine is an integral part of the American culinary experience," says Aarón, "and my cooking celebrates that." His food marries Mexican tradition with an American perspective, emphasizing seasonal ingredients and modern technique. Aarón aims to showcase his homeland's gastronomic depth and variety--which he likens to the diversity of France's provinces. Centrico's menu is a journey through the Mexican states, with picadas (corn tarts with salsa) from Michoacán, torta de mariscos (seafood frittata) from Veracruz, cochinita pibil (slow roasted suckling pig) from the Yucatán, and birria (braised short ribs in ancho chile broth) from Jalisco. Aarón adds his own creative touches, resulting in clean, vibrant flavors.\n\nCentrico is located in the heart of Tribeca--with a wrap-around full-service terrace overlooking Franklin Street and West Broadway. Its warm, festive atmosphere is enhanced by vibrant colors and a Mayan-inspired mural. Designed by Pulice-Williams, the space reflects classic Tribeca architectural style with its airy 15 foot ceilings and wall-to-wall windows. A hammered zinc bar winds along one wall offering hand-crafted cocktails, including several margaritas. An open kitchen permits guests a view of the young chef at work.
