About Us / Fat Toad Farm History: Fat Toad Farm is a small family farm and goat dairy in Central Vermont run by Steve Reid, Judith Irving and Calley Hastings - plus a great group of interns. Our family has spent several years building a high quality Alpine and Saanen goat herd. In the Spring of 2008, we took a major leap and became a certified goat dairy producing fresh goat cheese and goat’s milk caramel (cajeta). Fat Toad Farm produces farmstead cheese, meaning all the milk used in cheese production comes from the farm. We use the freshest milk to make our cheese. Our cheese has subtle flavor nuances throughout the year because the diet of our goats changes seasonally based on pasture availability. High quality alfalfa hay is fed in the winter, while the majority of their diet comes from pasture in the summer. We sell our goat cheese online in a 3 Pack or 5 Pack. The process for making caramel from goat's milk is quite different than making cheese. It’s more like making maple syrup. We hand-stir fresh goat milk and organic cane sugar over the stove for about six hours. During this time, the sugars in the milk and the organic sugar caramelize and produce the most incredible sweet and tasty caramel sauce. Rest assured that a lot of deep thinking and bad singing to the blasting boom box go into this caramel!We have found a use for caramel (cajeta) at just about every meal during every season. One of the best ways to enjoy our caramel (cajeta) is on fresh fruit throughout the year. Drizzle it on strawberries in June and finish the harvest with our seasonal cinnamon caramel on freshly picked apples. Use caramel in or on dessert dishes — on top of apple pie, as a layer in chocolate cakes, drizzled on ice cream. Or for breakfast add to oatmeal, mix in with yogurt or stir into your hot drinks like coffee, tea or warm milk.
