About Us / JX RANCH NATURAL BEEF History: We have been practicing holistic range manager for some 30 years, and have improved numerous ranches in various States. Tom is a sought-after speaker at various local and national events.
On our 7,000-acre ranch in eastern New Mexico, we have installed many range improvements such as miles of electric fencing, water pipelines, new wells, water storage tanks etc. in order to create a more uniform grazing distribution. We now have 26 pastures that we rotate the one cattle herd through, grazing each pasture on average 5 days, then don't return to that pasture for on average 105 days. This allows the more desirable and palatable grasses freedom to grow with strong roots that withstand drought conditions so common in this area. The cattle are thus always on a high plane of nutrition regardless of season. It also eliminates fly problems as they have long since left a pasture by the time the flies hatch.
We decided to fit the cattle type to the country, and use Longhorn, Corriente and Criollo cows, and to achieve a higher yielding beef animal, we use Charolais bulls, giving us a beefy calf with all the benefits of the leaner meat. Longhorn/Corriente/Criollo cattle are naturally insect and disease resistant - they are the descendants of the original cattle brought over to this country and many roamed wild for many years - survival of the fittest.
Our calves are born and raised on our ranch, grazing native grasses their entire lives, never seeing a feedlot or other enclosure. We do not administer any antibiotics hormones or other chemicals. We handle our cattle in a quiet, slow manner, to avoid any stress which can affect the quality of the meat.
We harvest our calves at a younger age than most grass-fed beef producers - they are usually anywhere from 12 to 16 months of age. Thing young age coupled with a full 21 days of dry-aging results in extremely tender, and flavorful meat.
