About Us / Omega Beef History: Amanda and I took an interest in food quality when our daughter Anna was a baby in 2002 - and we continue to learn everyday. From the Westin A. Price Foundation to the chefs who love the art of the meal, we have learned about the beauty of food from farm to table.
As lovers of beef, growing our own became a real passion. Early on, the idea of "grass-only" beef was something I was hoping to avoid - I just didn't like it! For years, we connected with ranches in Kansas and Missouri and often times, I found the "grass-only" beef to be dry, tough, or just tasting bad. I was convinced I needed grain.
So, we started to experiment with a finishing method to raise the Omega-3 fatty acids and balance the whole lipid profile of the beef - we used corn and freshly ground flax seed. Well, this method produced decent tasting beef, but it was very expensive, labor intensive, and not the health quality we wanted to produce.
As we learned about the tremendous benefits of grass-only fat profiles, CLAs and the other nuanced benefits of happy cows, we set out on our mission:
Grow high-quality great tasting beef with animals that never touch grain.
Well, we believe we have found something special. Our Omega Beef is delicious!
The secret was two-fold:
1) Genetics (animals that have grass-finishing genes), and
2) Soil/vegetation quality (mineral balanced soil with high-quality nutrient rich grasses and legumes)
First, the genetics: our steers are from a mix of combining four maternal breeds: Angus, Hereford, Senepol, and Barzona. They are great at turning grass into tender beef.
Secondly, the beautiful grass: though we can't take much credit for the incredible soil composition of the Kansas Flint Hills region, with the optimal mineral content, creating some of the best grasslands in the world, we are grateful for this blessing.
So, here's to tender steaks, wonderful beefy roasts, and of course delicious grass-fed cheeseburgers!
