About Us / Prairie Hollow Farm History: We are a sustainable organic farm that is family owned and operated. We make farmstead cheese, bread and we grow a variety of vegetables and fruit. Our goal is to provide our customers with delicious and wholesome food.In order to receive farmstead cheese designation in Minnesota, a farm must milk their own animals and make cheese on the farm in an inspected processing plant. We have been producing cheese since 2000, and have gained a reputation for high quality cheeses that embody the flavors of southeast Minnesota. Although Pam’s uncle, Vern Mullin, was an award winning cheesemaker for the Elgin Creamery, he passed away before Pam had a chance to learn how to make cheese. Pam went to Maine and stayed with the Spinney family who were farmstead artisan cheesemakers. After intensive training, Pam returned home and built Prairie Hollow’s first cheese plant on the Dover farm. In 2005, Pam moved back to her parents’ farm with her three youngest children, Isaiah, Bethany, and Jonathan. They moved the cheese business there as well. Pam, with help from her children, produces Cheddar, Monterey jack, Colby, Feta, Havarti, fresh Mozzarella, Ricotta, Gouda, and Moo-vre. Whole wheat bread is another product of Prairie Hollow farm. We raise kulm wheat for flour. The flour is freshly ground before each batch of bread is made. Pam makes a variety of breads, whole wheat oatmeal, summer herb cheese, cranberry walnut, raisin walnut, apple cinnamon, to name a few. Prairie Hollow also produces fruit and vegetables. We strive for excellence when it comes to producing and choosing the best varieties flavor experience and nutritional value, eye appeal to offer our customers. Isaiah has four gardens, two greenhouses, two small orchards and just started a vineyard this year. The greenhouses are used for both winter and summer production. Livestock plays an important role in the sustainability plans for our diversified farm. In 2011, Isaiah brought pigs back to the farm. The pigs serve as garden tillers while converting waste to fertilizer. The 100% grassfed beef helps fulfill our goal of converting the majority of the farm to permanent vegetative cover.
