The farm, which has been in Liza’s family for six generations, is located in the beautiful and historic Happy Valley on the Yadkin River in western North Carolina. At Ripshin, Liza and William manage a herd of registered ADGA (American Dairy Goat Association) American Saanen dairy goats- known for their calm demeanor and productivity - using the most humane and ecological practices. They describe their farm as “multiple generations of goats grazing twenty acres of woods and pasture, enjoying fresh air and sunshine by day and shelter by night.”\n\nLiza was inspired to start a goat dairy after visiting the historic Carl Sandburg Farm in Flat Rock, NC, and two small goat dairies in France. Liza's son Jesse, an architect, built their milking parlor and cheese room with “passive” design principles in mind, so that the dairy buildings make the most use of natural sunlight and ventilation.\n\nRipshin Goat Dairy farmstead goat cheeses are sold at farmers' markets in Boone, Blowing Rock and Hickory, NC, and at a dozen or more area wine shops and restaurants. For the 2011 season they are crafting fresh chevre, both plain and herbed, feta and farmer's cheeses. To learn more about Ripshin Goat Dairy, visit their website at www.ripshingoatdairy.com.
