About Us / Salento Farm History: In 2009, couple Dorothy DeMarco and Patrick Salvati were inspired by a trip to Italy to turn their property, which has been in the family since the 1940's, into a working farm. Growing primarily garlic and eggplants, they have turned these crops into gourmet products. Patrick Salvato makes Green Garlic Pesto, Pickled Eggplant and Roasted Garlic Butter by hand. These products, as well as fresh garlic and garlic powder, can be found at farmers' markets all over New York City.
