About Us / The Bluebird Cafe History: In 2012, Bluebird Executive Chef William B. Hawkins returned to his Southern roots and partnered with Marksbury Farm Market and Jess and Angela Correll to open Central Kentucky’s premier farm-to-table restaurant — the Bluebird Café.
Prior to leading the Bluebird, Chef Hawkins garnered a long list of professional highlights, including tenures as chef to Elvis Presley Enterprises and nationally-ranked golf resort Victoria National Golf Club. He has appeared on the Food Network with Bobby Flay, the Discovery Channel, Travel Channel, numerous local news stations and Tim Farmer’s Country Kitchen on KET.
Chef Hawkins discovered he had a passion for natural foods during his time at Victoria National Golf Club when his own health began to decline as a result of Crohn's disease. He started to turn his life around by eliminating harmful chemicals from his diet and eating organically; his health improved dramatically as a result. It was during this process that Chef Hawkins was struck powerfully by the realization that industrialized foods had not only been killing him, they were killing our nation, too.
Around the same time, Jess and Angela Correll were searching for an executive chef to head their new restaurant, which would have an emphasis on local food. Jess, a businessman and part-time farmer, and Angela, a businesswoman and writer, are both seventh generation Kentuckians and maintain strong ties to the land that has provided for their families for centuries. Upon meeting Chef Hawkins, it was clear to the Corrells that he shared their values, morals and beliefs. From that partnership and commitment to the same vision, a Bluebird was born.
A bustling, visible cook line, exposed brick, soaring ceilings, aged wood paneling and furniture, and clean industrial lighting welcome patrons into the Bluebird, providing the perfect atmosphere for an unforgettable farm-to-table experience.
