About Us / Valicenti Organico History: Longtime chef David Valicenti has been making pasta his whole life, so creating pastas and ravioli using produce from his own and neighboring farms came naturally. Valicenti Organico started three years ago, when their tomato sauce - made from a bumper crop of tomatoes, sold out at markets. They have since expanded, and now make pasta in their newly-renovated apple barn. Pastas come in several varieties, and are made with grains ranging from semolina to farro.
