Ingredients:

  • 3 medium zucchini scoop out middle save
  • 3cloves garlic chopped
  • 1/2 cup diced onions
  • 1/2 cup chopped peppers
  • Sauté add scooped out zucchini pulp
  • Add 1tsp cumin
  • 1/2tsp oregano
  • 1/2 tsp salt
  • 1tsp chili powder
  • Add 8os shredded chicken
  • 3tbsp chicken broth
  • 1/2 cup mozzarella cheese
  • 3 tbsp enchilada sauce
  • 2 tbsp fresh chopped cilantro

Directions:

  • Pre heat oven to 400 degrees
  • Scoop out zuccini
  • Sauté first 4 ingredients
  • Add seasonings and chicken
  • Put inside hollowed out zucchini boats
  • Top with 1/2 cup mozzarella cheese
  • Sprinkle extra enchilada sauce on top
  • Cover with aluminum foil
  • Bake for 35 to 40 minutes
