As we farm, we understand the ingredients we use and only by farming do we really learn what true seasonality means.”As the girl & the fig farm project enters its third season, this simple statement by Executive Chef John Toulze illustrates the deep connection he and his team have developed with the two-acre Biodynamic farm on Imagery Estate Winery in Glen Ellen that has blossomed into “the farm project.”“the farm project” began in 2010 as a natural evolution for Chef Toulze and his partner, Sonoma Restaurateur Sondra Bernstein. Sondra and John are the Proprietor and Executive Chef, respectively, for three Sonoma Valley restaurants: the girl & the fig and ESTATE (in Sonoma) and the fig café & winebar (in Glen Ellen). The restaurants have always been “ingredient driven,” meaning that seasonality has been their inspiration since they began cooking together in 1997. The partners see their restaurants as gathering places in the community and they share a passion for communing at the table with family and friends. Providing fresh food and local tasty produce on their menus has always been an integral part of what they do at the restaurants. And, their commitment to showcasing the bounty of Sonoma with the feasts they create for their guests is a fundamental tenet to their vision.
